We were given an extra challenge for this week and it was to make a soup or one-pot meal. This was timed well to coincide with the snow and drop in temperature. I made a batch of my
Sausage and Greens Soup. This batch is made with leeks from
The Saturday Farmers Market at the Village, kale and turnip greens from
9 Bean Rows homemade
Hubbell Farm chicken broth and my
homemade apple/anise pork sausage, made with pork raised on
Bare Knuckle Farm.

What a nourishing soup! When we made sausage last year we did an apple type as well. The walkthrough of your sausage making experience is great, too. Well done!
